how to make preserved lemons

these preserved lemons are a wonderful way to preserve the flavors of citrus.

–lemons –kosher salt –bay leaves –herbs

Wash and dry lemons thoroughly  

Slice each lemon into quarters, making sure not to cut through the bottom.

This is how each lemon should look

sprinkle a teaspoon of salt into each lemon. I like to pack my lemons full

Place a lemon in the jar, cut side down, and press firmly to release some juice

add spices and herbs in between lemons

repeat the process and then press down lemons so they all fit. they should start releasing juice 

Close the jar and store it in a cool, dark spot for at least one month, shaking it every few days to redistribute the salt and juice.
