Honey Ginger Ferment  with Lemons

This brew one of my winter staples. This Ginger, lemon and honey ferment is easy to make and tastes delicious. 

Honey Ginger Ferment  with Lemons

INGREDIENTS -peeled and sliced ginger lemon slices – raw honey

Place the lemon slices and peeled ginger in a glass jar.  Pour enough honey to cover them completely.

1 Cover with lid and place in a cool dark spot; for the first week,

2. Check it daily, opening the top and "burp the jar" to release any gasses that may have built up.

Over time the raw garlic flavor mellows out and the honey takes on a savory but sweet garlic flavor.
