This grapefruit mimosa recipe is a refreshing twist on your Sunday brunch. 

Why grapefruit rocks!

Grapefruit has a lot of potential in the kitchen. It's sweet, tart, and juicy, so it's perfect for refreshing drinks, or in desserts like tarts and cakes.

Grapefruit can be a tricky fruit to preserve, though, because they don’t keep very well at room temperature.  Here are three quick methods to preserve  grapefruit:

01 You can make grapefruit curd! It’s delicious on toast or scones, or even as a dip for biscuits. (It does contain eggs, so it won’t keep for more than about a week in the fridge.)

02 Peel and chop the grapefruits into little pieces, then freeze them overnight in a bag before eating or cooking with them. The frozen chunks make great additions to smoothies and other homemade drinks

03 Preserving grapefruits by drying is also easy! Cut the whole fruit into thin slices  Place on cookie sheets and let dry at 115 degrees F overnight or until completely dry and crisp. Store in airtight containers at room temperature.

– 2.5 oz of Champagne or sparkling wine of choice – 2.5 oz grapefruit juice – 1 slice of grapefruit for garnish

Ingredients

1. In a glass pour 2 ½ oz (75 ml) champagne or sparkling white wine halfway up.

1. top with 2 ½ oz (75ml) freshly squeezed grapefruit juice.

Stir to combine. Garnish with grapefruit slice or garnish of choice
