- old fashioned oats: whole oats are what you need here, and they are usually easy to pick up.
- dried peach slices: these could be swapped for another fruit like unsweetened coconut flakes to coconut chips
- dehydrated berries
- curly dock seeds: flax seeds or chia seeds could be a good mix-in if you did not forage for these.
- coconut oil: Melted coconut oil is key here. This could be a mix of different oils such as olive oil, canola oil,
- dehydrated crushed pineapple
- Honey: you can swap this for real maple syrup
- Pepitas (dried pumpkin seeds) but you can use sunflower seeds, raw almonds or other nuts. you have in your pantry
Instructions
This granola is a great way to use up the last of your summer fruit. I love it with dried peaches, but you could also use apples, apricots, or strawberries.
Preheat your oven to 325 degrees F. Spread the mixture onto a parchment-lined baking sheet in a single layer. Bake for 20 minutes or until golden brown. Remove the sheet pan from the oven, and leaves it out until the granola cools to room temperature completely before mixing dried fruit and storing in an airtight container.
Store your granola (i store mine in a mason jar!) in a cool dark place or freeze for later use!
