Grilled tofu that actually holds its own? This bourbon-brined brioche burger is smoky, savory, and stacked high with all the fixings. This recipe comes from grilling legend Steven Raichlen, developed in partnership with Bib & Tucker Bourbon for their summer BBQ series—shared here with permission.
Ingredients
Tofu + brine:
- 2 lb extra firm tofu, drained and pressed
- 1 cup water
- 1 cup tamari or soy sauce
- ½ cup Worcestershire sauce (vegan or regular)
- ¼ cup Bib & Tucker The Classic Six Bourbon
- 1 tablespoon Montreal steak seasoning
- 2 cloves garlic, crushed
To serve:
- 4 brioche buns
- Lettuce, tomato, pickles
- Mayo, ketchup, mustard
- Olive oil for brushing and grill grate
Instructions
- Prep the tofu: Slice into slabs and press for 15 minutes to remove excess moisture.
- Make the brine: Whisk together water, tamari, Worcestershire, bourbon, seasoning, and garlic.
- Brine the tofu: Place tofu in brine, cover, and chill for 1–2 hours, flipping once.
- Grill: Pat tofu dry, brush with oil, and grill 1–2 minutes per side until golden and smoky. Toast buns.
- Assemble burgers: Spread condiments on the bun, layer with lettuce, grilled tofu, tomato, and pickles.
Stephanie’s Serving Tip
This one’s great with grilled corn and bourbon lemonade. Want to double down on the smoke? Toss a few wood chips on the fire before adding the tofu.
