How to Make Cranberry Mayo
First, you'll need some leftover cranberry sauce from Thanksgiving or Christmas—or maybe even a can of cranberry sauce will work just fine! (If you don't have any leftovers from dinner, feel free to use whatever kind of cranberry sauce you have on hand.)
Start with a small bowl of leftover cranberry sauce, which should be in the refrigerator. Add about mayonnaise (you can add more or less depending on your sauce).
Next, mix the cranberry sauce with mayonnaise until they're well combined. If you want a super smooth texture, use an immersion blender or a food processor to blend the ingredients until they're smooth. Once your spread is at the right consistency, refrigerate the mixture for at least an hour before serving.
HOW TO USE THIS CRANBERRY SAUCE MAYO
I'm not saying you should eat this stuff straight out of the jar, but…
- Spread it on sandwiches, especially turkey sandwiches.
- Make a dip by adding chopped sweet onion and sour cream (or plain Greek yogurt) to the leftover cranberry mayo.
- Cranberry Mayo Chicken Salad - combine fresh or dried cranberries with mayo and chopped chicken for a tasty twist on traditional chicken salad. This would be great served alongside lettuce or crackers for an easy lunch or snack.
- Cranberry Mayo Chicken Sandwich - top your favorite bread with cranberry mayo, chicken breast slices, lettuce, tomato slices, and cheese for a quick sandwich that will keep everyone happy.
STORAGE
Store extra mayo in an airtight container in the fridge. You can keep them there for 3-5 days.
